Brownie Biscuits

When I came across this recipe (thank you Mr. Kirkham) I nearly died. It is a brownie but ALSO a biscuit? Could there possibly be anything more exciting?

Nope. I didn’t think so! As always, have slightly adapted the recipe to my own personal preference and I feel this has made them even better! If you want to add your own twist, try mixing up the chocolates or maybe even throw in some nuts instead of the chocolate chips.

Makes 14-18 cookies

Ingredients

  • 55 g unsalted butter
  • 70 g dark chocolate
  • 70 g milk chocolate
  • 2 large eggs
  • 150 g soft light brown sugar
  • 50 g granulated sugar
  • 1 tsp vanilla extract
  • 95 g plain flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 100 g white chocolate chips

Method

  1. Preheat the oven to 180°C and line a baking tray with baking parchment
  2. In a large saucepan, melt together the butter, dark and milk chocolate over a low heat until smooth – remove from the heat
  3. Now stir in the eggs, sugars and vanilla extract
  4. Mix together the flour, baking powder and salt and fold into the chocolate mix
  5. Tip – allow the batter to cool to room temperature before adding the chocolate chips as they will just melt (but if you are using nuts, chuck ’em in, no need to wait)
  6. Drop the batter in tablespoon measures onto the baking sheet – make sure you space well apart as they will spread
  7. Bake for 10 minutes and then allow to cool for around five minutes before transferring to a wire rack.
  8. Enjoy!
