Dark Chocolate & Walnut Biscuits

One of the things that I love more than anything about baking biscuits is that you don’t have to worry about the whole batch looking like one, uniform bake. You can enjoy the fact that each biscuit has it’s own personality, shape and feel to it!

And that rings true with these particular biscuits. To me, each one should be it’s own character for friends and family to enjoy! Little splodges of heaven.

Makes 18-20 biscuits

Ingredients

  • 75g unsalted butter
  • 60g caster sugar
  • 1 large egg
  • 175g wholemeal plain flour
  • 1 tsp vanilla extract
  • 1-2 tbsp milk
  • 150g dark chocolate (chopped)
  • 50g walnuts (chopped)

Method

  1. Preheat the oven to 180°C and line a baking tray with baking parchment
  2. Beat the butter and sugar together until well mixed
  3. Beat in the egg and olive oil until well combined
  4. Now add the flour, vanilla extract and milk and mix until you have created a slightly sticky, dough
  5. Mix in the chocolate and nuts, using your hands preferably to create a more manageable dough
  6. Divide into 18-20 evenly sized dollops using a spoon  and arrange on baking tray, spacing well apart
  7. Squish them down with the wet back of a spoon
  8. Bake for 15 minutes until soft to the touch and golden brown
  9. Remove from the oven, allow to cool and them move to wire rack
